I know a sportster is a great starter bike but?

yes lots of people do. as long as you aren't a bigger person. I have seen many people ride sportsters when they get experience. Only thing is it is a smaller bike so it can be a little silly for a bigger person to ride it after they have learned on it.
I would suggest a test ride though in the parking lot to see how you like it. I have heard that they feel a bit top heavy but I have never personally driven one. I have rode on the back of one when I was younger but I would suggest test riding them before you buy
