its running hot, when we take the cap off the top of the water is covered in white foam, is this a sign of a cracked head?

we are getting a engine for it. will a 360 gas motor fit/bolt up to my truck?
my motor is a 318, 5.2L

No, the white (it's really sort of yellowish if you look at it) foam is an emulsion. It is the residue of oil and water being thoroughly mixed. If the head were cracked, your coolant would go out the exhaust pipe. You more likely have a cracked block. If you don't go very far, you'll might have a little coolant in your crankcase too (though it might boil off).

You failed to mention what kind of engine you have. If I'm not mistaken, a 318 and 360 use the same block with a different bore. I could be wrong on that. Even though I used to work for Chrysler (I'm an engineer) I didn't really become an aficcianodo of their engines. Now, you want ask me about a Tahoe... (I worked at GM too).
