i have a pretty stock chevy 350 with hedman headers an edelbrock torker 2...

...intake and a holley 600 cfm carb? it idles perfect but it doesnt wanna take the gas off idl. if you just ease the throttle open to barely above idle it takes it perfectly and runs great. i just wanna know what needs adjusing to fix this. ive capped all vacumes that are not being used but it still dont help. somebody tell me something please. it will be greatly appreciated. thanks. by the way, the carb is brand new.
yes it cuts out. almost shuts off
 
maybe an air intake problem, if you ease the throttle in it manages to pull enough air in to enable it too run ok, when you stick the foot to the floor it cant get enough air in the cylinders to combust the fuel as well as it should do. have a check of all your induction system and see if there are any air leaks.
failing that, and this is a guess because i dont no if your vehicle has one, but check the air flow meter is functional... it basically governs how much fuel is needed to be injected into the engine on a certain volume of air, if thats knackered then it isnt supplying the fuel required
