I have a homemade pizza cooking question! Help!?

Okay so I discovered a few months ago the awesome joy of making homemade pizzas. I buy premade already baked crust. All I gotta do is add sauce and cheese then add it into the oven. The first few times I've made the pizza, the cheese melted fine. It was gooey, melted thoroughly, and delicious. But the past 2 times I did it, for some reason it's been doing this thing where it melts but not all the way leaving a weird texture and an icky aftertaste. I checked the date on the cheese, it was fine. I haven't changed ANYTHING at all. I wait until the oven is preheated to 425 degrees on Bake, put in the pizza for 9 to 12 minutes, and it just doesn't melt how it used to. I even let it chill in the oven for another 3 minutes and the cheese consistency stayed the same...weird texture and weird aftertaste. Does anyone have any clue wtf is going on here? :(!
