You may have already done this but did you go through all the settings for the ps3? There's the option for connection type and I think highest picture quality your tv allows. A lot of it is automatically detected if you just pick the connection type I think.
 
...have gone thru all the settings...? and cannot seem to get anywhere near the quality I see in the store. It is only slightly better that my regular DVD player. It is connected to my tv via HDMI cable. How can I get better quality?
 
Your TV has a settings menu in it if I remember correctly you can adjust the TV to put out at 1080i/p and then you must also make that adjustment in the Blu-Ray player to put out at 1080i/p so you make the same outputs. I would suggest using a gold version of the HDMI cables which lend themselves to better quality picture, rather than the RCA type I would suggest the USB or the S-Video type of connection also. You could even convert the output from the S-Video to a VGA output if you choose and then run it to the PC terminals on the back.
The stores use a really high end setup to get you to buy the sets and the dvd players, leaving out the fact that to get the same display you would have to spend lots of money on equipment. There are several things though you can do to acheive the video quality, try looking at the video settings for Home Theatre, in the display settings of the TV and there should be several , then find the one that gives you the best picture for the lighting in the room, Theatre, Movie, HDTV and Blu-Ray will some f the settings.
 
Is it a high Definition TV? Are you using a standard HDMI cable? Are you using a blue ray disk?
If all question answers are YES, Then your TV is not good. Or its not tuned up right.
check the settings in the TV, May be you kept in low quality.
