i have a 1997 chrysler sebring and its running hot?

i have recently changed my thermostat, but earlier today i checked it and forgot to put the cap back on and then i made it down the road when i noticed that my heat hand was almost touching my h and then i put water in it and it was fine and now its going back hot again, and i have no idea what it could be???? HELP ME
