With PCs, you had to keep up with defragments, clearing browsing history, cookies, etc. Is there any type of routine maintenance that I should be doing with this one? And also, is it true that you don't need any kind of anti-virus for these?
You still need to do all those things. Being a Mac doesn't change how a file system works. And definately get an anti-virus program. Mac is no less vulnerable than a PC. It's just that there are so few macs that it's not worth it to virus writers to target them, so fewer are written.
Defragmenting is all done invisibly in the background with any need for you to worry about.
The only thing I would say you should do is just keep the software up to date. You can do this by clicking the Apple icon up in left corner and choosing 'Software Update'. It'll check to see if you need any updates.
