I grew a big max pumpkin and I decided to make a pumpkin cheesecake. It wasn't until after I did research that I found that I should be using a sugar type pumpkin. Is there anyway that I can use the pumpkin now? I have all the seasonings I need to add to puree, but obviously the big max doesn't have the sugar content in it versus a sweet type pumpkin. Should I abandon using it in a cheesecake?
