How to properly count calories?

This is a very efffient way to lose weight along with excercise as i have noticed and i know how it works, that to lose weight you need to burn more calories than you intake and that 3500 calories is a pound. But im confused about how to properly do it, I mean if i severely cut down my calorie intake and lose a lot of weight, am i going to hit a plateau? I want to lose about 100 pounds so i cant keep decreasing my calorie intake or else by the time i reach my goal i will be eating close to nothing, i predict? or if i were to start eating about 1200 calories a day, could i maintain that amount throuhgout my weightloss and continue eating 1200 calories daily and maintain my new weight? Help please!
