How to not freeze up when talking to girls?

I tell you now, nothing is more disheartening than completely locking up when trying to talk to a girl you're interested in, after coming up with conversation starters in your head and such.

I really wanted to talk to her. When I ran into her I couldn't think of anything interesting to say. I walked back feeling terrible.
