How to cook cod. Not as easy as it sounds.?

I have the flesh of the cod all de-skinned and ready to be cooked. Its not in fillets more just like chunks of meat. My only method of cooking is a frying pan, and I pretty much only have basic ingredients. (Onion, garlic, butter, salt, breadcrumbs, oil, vinegar, milk) I also have rice to cook it with, How would you go about preparing a meal out of this
 
Make a croquette. ( a fried patty)

1 dash salt
1 lemon
1 1/4 lbs fresh cod
1/4 cup vegetable oil, eyeball it
2 teaspoons seafood seasoning ( Old Bay)
2 stalks celery & leaves, finely chopped
1 small yellow onion, peeled and finely chopped
3-4 tablespoons chopped fresh flat-leaf parsley, a handful
black pepper
1 egg
2 cups plain breadcrumbs

Directions

Season the fish and place into a pan with 1.2 inch of water. Cover the pan and cook fish for 8 min.

Remove and flake fish into a bowl. Let cool to touch. Add all the seasonings and veggies. Beat the egg in another bowl and add along with the breadcrumbs. Make into patties.

Add oil to a pan and fry those babies up.

Can serve with lemon wedges, tartar sauce ( mayo & relish work)
