How to connect a 5.1 sound system to a PS3? (Toslink Digital Out connection)?

At the moment I have a 2.1 plugged inthrough AV outputs on the back, but how do I connect a 5.1 to the PS3 using the "digital out" (toslink) connection on the back? Are there any setups you'd reccomend? Thanks
