How to camp on a bicycle?

I saw some bicycling events that run for a week, such as the Michigander Bicycle Tour which rides 35-55 miles per day and include camping at night.

however, does the fact that they say "shuttle service for your baggage" mean they will carry your tent for you?

Yes they will load up your tent and other gear and transport it to the next stop. Sounds like a nice way to do a tour.
