How to avoid additional charges on Verizon's Unlimited email and web browsing service?

I'm looking at a HTC Eris (Android) phone and I've never used a smartphone before. I noticed it says "browsing" so does this mean I could incur charges if I download certain things? Does this include pictures or streaming video? Is streaming video only possible on wi-fi? I've heard of $300 text message additional charges which is why I'm asking.

I'm looking at the $30 Unlimited E-mail and Browsing plan. I don't text or know enough people with good phones to send pictures to chose any messaging plan.

Also:

How easy is it load files on to the phone and do they need to be a propitiatory format? Can I just transfer video files or input addresses via USB or microSD from a computer? I really don't want a smartphone if it's full of costly proprietary gates.
