How should I discuss this issue with my new college roommate?

I am a freshman in college and just moved into my dorm. My dorm room is really small (barely enough room to walk). There would be a LOT more room if me and my new room mate bunked our beds, but she doesn't want to. Everyone else on our floor bunked theirs because its almost impractical not to. I don't know if I can handle living this cramped the whole semester, I really need our beds bunked. Also, because the beds aren't bunked, there isn't a lot of room for our stuff. She moved in first and basically took over what little room there is, her stuff is even on my side of the dorm. This room is way too tiny to not bunk the beds, how can I talk to her about this without seeming rude? I really don't want to start out the year on a bad note with her, but at the same time I don't want to set myself up for being uncomfortable the whole year. Should I just request a roommate change if she really doesn't want to bunk?
