How should a photographer charge/pay sales tax on an account for wedding

photography (IL sales tax)? For example, I've booked a wedding for $1299, which includes a photo album and photo guest book. So far, they have only paid $100 towards their account, which they are making monthly payments toward. How do I report this when I file my monthly sales tax in IL? Since photography service is not taxed, but tangible items are, I know that if they were making a lump sum payment I would take 10% ($129) of the sale and charge 7.25% of that, making the tax $9.35. (At least that's what the lady at the IL Dept of Revenue told me). But when my client is making payments, how do I report the income or taxable receipts when I haven't received all of their total balance yet?
