How long will Dr. Oetker's Organic Apple Cinnamon Muffins keep?

I made them the vegan way, replacing the egg with flax seed and the milk with soy milk. I made them in paper muffin cups and I plan on storing them in the refrigerator inside a rubbermaid container with a lid. How many days should they keep for?

Bonus Question: How do you pronounce "Oetker"?
I have to eat 12 muffins in 2 days?? Yikes ... I should have divided this box of mix!
 
Like a couple days tops. Baked goods do not last long.

It's pronounced eeet-ker not the "'e" sound but the et sound in the word minaret
