How long is tooth enamel soft for after eating sugar?

I know you're not supposed to brush your teeth right after eating quite a bit of sugar, but how long is it soft for?
I also read that it's actually worse to eat small amounts of sugar throughout the day rather than one large portion, is this true?

The reason I'm asking is because I like having a nice candy bar every day or so, just one, I enjoy them :).
But sometimes I'll eat half of it and eat the rest later in the day, is this actually doing more damage to my teeth?
If so, what is this damage exactly?
 
Actually, it is a good idea to brush teeth or chew sugarless gum after eating sugary food. If neither one is possible, drink water and rinse your mouth.

When you eat sugar, it sticks to your teeth. The bacteria that live in your mouth love this. They eat the sugar off your teeth and produce acid, and the acid is what softens teeth. This goes on for an hour or two after each meal or snack, and the softening can over time become tooth decay.

So as far as dental health is concerned, how often you eat sugar is more important than how much. (For your waistline, how much is what matters!)
