HOW is it that cooking from scratch is cheaper than convenience?

For example, cake. If I purchase a cake mix, it will cost me about $1. Maybe another $1.50 for cheap cake frosting. If I purchase everything needed to make homemade cake & frosting, it will cost much more... won't it? Am I missing something? I don't *think* it will be healthier, as buttercream frosting is made from [Crisco] shortening.
And pizza. I'd love to try making my own pizza but have never tried, so we'll assume I try and actually succeed. (Otherwise, it's a waste of money.) For the crust I'd basically need water, sugar, corn meal, flour, and active yeast. Then I'd need pizza sauce. I could make from scratch -- tomato sauce, paste, garlic, & seasonings. Let's 'claim' it would cost the same to purchase ready-made pizza sauce just to even the playing field there. Then we still need toppings and cheese. Now I'm not talking the 'cheap' $1 inferior pizzas, but I still think I'd come out cheaper from carry-out. I mean, pizza places will offer large pizzas with 1-2 toppings for about $7. Do I really come out cheaper?
I'd really like to start cooking from scratch if I can get out cheaper & healthier at home, for many reasons. But I just want to know that's true.
Your opinion???

PS I do believe I should still purchase grocery "extras" as sides -- like fruits & vegies.
