How does going vegetarian affect the environment directly?

They say that a pound of meat takes the same amount of energy to produce and get to your table as it takes an SUV to drive 40 miles. Ok, meat is bad and it increases our carbon emissions. I get that. But how is one family who gives up meat one day a week, or even a vegan who eats locally, going to affect carbon emissions? The only thing I can see happening is that others might follow their example.
But then again, livestock raisers aren't going to stop raising animals and slaughtering them just because a couple of people are repressing their omnivorous side. The meat still ends up at the supermarket, and if no one buys it, it's still going to be thrown out. So is there no solution? Do we just keep eating meat because it's going to be going to waste anyway?
I understand how, with cars, for instance, this is totally different. You can choose to not buy a car and not pollute. You have control over what you do in this case. But with meat- it's at the store, and it's not going away.
