how does dry ice behave in vacuum?

Does it sublimate (produce gas)? Would it retain it's mass? Could it even form in vaccum, or an extremely low pressure atmosphere?

I'm watching History Channel and they're talking about Mars. One comment was about how MUCH CO2 is on Mars, yet they're talking about "frozen water at the poles". So, it got me thinking is it really water ice, or "dry ice"?
