How do you use a slow shutter speed in bright daylight conditions to capture waterfalls?

I use a Nikon D80 and would like to take photos similar to this.

I'm using the lens that came with the camera. It's an AF-S DX Nikkor 18-135mm f/3.5-5.6G IF-ED.

I'm hiking to a few falls Monday in the Great Smoky Mountains and would like to take a few pics. How does one achieve the slow shutter look? I've read my manual regarding this and I'm more confused than ever.

I've only had the D80 for 2 weeks so forgive my lack of knowledge.
