How do you know where a restaurant gets it's food, in particular meat?

I would think it's regional even if you are at a border. It's the small, hole in the wall, joints I want to know about.
@Bethany, I'd say it's about even. I've thought about and tried the veggie thing, and may try again. Thing is, all things considered, meat is a quick and easy and convenient way of protein. I don't like how it's prepared yet I'm too into efficiency. I'm not going to have a DA*n protein shake that consumes more resources, by being scientifically prepared than a poor chicken or cow.
