How do you do? What is the history behind the hand shake?

I just though it was interesting we (In the US at least) Think of bows and curtsy's as a formal thing and usually make others uncomfortable when given one instead of a hand shake at normal meetings as on the 'street' or job interview .
How did the hand shake become our "greeting" sign and when did the bows disappear into fairy tales and formal occasions only and then only some times?
