How do you cook bread all the way?

Anyone know a sure fire way to make sure that bread, mostly banana and zucchini, are cooked all the way? I have tried lowering the temp, raising the temp, cooking longer, etc. and it always comes out gooey in the middle.
 
I use the old cake tester. I know to get the middle done better, it sometimes bakes the edges too dark and dry. Towards the end, I'll actually cover just around the edges as I do with a pie crust so I cake keep it in longer to bake the center well. The recipes I use say to bake at 350 degrees for 45 to 55 min. in a 9X5X3 in. loaf pan. I test at 45 and usually cover it then and leave it for the extra 10 to even 15 min longer.
