How do they make the 3rd party apps you see for Iphone's, etc.?

What would need to learn to start making simple apps for handheld devices like IPod touches or IPhones. What language do people write their apps in, where could I learn how do make simple programs that could be used on hand held devices such as Google's G1, and Apple's IPhone.
