How do they judge the heat?

in different foods I know there's a word for it but I just can't figure it out I think it starts with a K or a T something idk
 
it called scoleville units and it measure the amount of water drops it takes to balance the capssaisin oil in the pepper ex. habanero has 300,000 units and the jalapeno has 2000 pretty cool stuff and by the way I may have mispelled a couple of words
