how do they do professional movie effects (with out the CGI)?

ok i have all ways wondered how do movie makers make the effects they do like in twilight how did they make Edward clime that tree? or how did they make the apes in the newer planet of the apes run so fast effects like this i know aren’t done with CGI it was something else can some one give me some links to web sights that explain these and more
