How do the French cook chicken breast? Had one at a restaurant, so tender, meat

just melts in your mouth...? The chicken had skin on, crispy skin yet once you eat it, the meat just melts in your mouth like butter. That was how tender it was! Any ideas of how its cooked to be this way?
 
Brine your meat let it sit in the fridge for about an hour then coat it lightly with flour use cooking spray or olive oil to coat your skillet, and cook the breast at a medium high temperature on each side for about 4-5 minutes if you have poached the meat but if it is unpoached about 6-7 minutes. Your breast will have a crisp to it but will melt in your mouth. I cook it all the time. Hope you enjoy!
