How do people in there own business keep going when they can't control so much?

I am on vacation now but when I get back home I have to make a certain amount of money. I have a handyman business my husband does most of the work but I market it & I do most of the office work. I also work as a professional organizer but what I really do is help people clear up clutter.....We have to make a certain amount each day but sometimes customers cancill or we have to cancel or it rains & causes an outside job to be cancelled.....I am not very knowledgable about business but I know there has to be a better way of looking at this or a way of organizing things better so this will be easier....I know we can plan to work 7 days a week to make up for the days we might not have work but then if we do end up working the 7 we end up burnt out...what is the solution?
