how do multiple type of cells get done from a single one?

Hi. During cell division a cell gets divided into two equal parts. But how do multiple cell types emerge then? I mean, cells that form our bones are different from the ones that form our skin... Where is the point in a process of cell divisions when a cell says "Hey, I don't want to be like my parent any more. I'll become something different instead?"
Thanks
