how do i remove cable housing from a shifter on a bike?

i recently got new shifters for my bike. and the directions say to remove old cable housiung and put in the cable. well i dont know how to remove the cable housing. i tried to just pull it but it wouldnt come out. then i opened up the shifter and i was thinking of just cutting the old cable that is inside the shifter. but im afraid that would mess it all up? HELP!!!!!!
