How do I make burgers like the Greek fast food restaurants?

I used to live on the Southeastern coast, where these WONDERFUL family-owned, burger joints were prevalent. The best ones were almost always owned by Greeks (usually father to son), and no matter what city you're in, you'll have a certain expectation of what the burger will taste like, and you'll be right.
People flock to these places like it's a drug. I can't help but wonder what makes these different. Is it simply a seasoning, perhaps oregano? or would it be something extra? They were fried on a long grilled! It's funny how often when we're missing our home state, my husband will bring up the burger joints there. I would LOVE to be able to make a hamburger that at least reminds him of the place.
