How do I keep the guinea pigs' veggies cold during a long car trip?

On Thursday, my entire household is leaving for about a week. We have someone to watch our other pets (cats/dogs), but no one that knows how to properly take care of guinea pigs.
So we've decided to take them with us. I've read about how to travel with them and such, and they've been to the vet various times anyways, so I'm not really worried about that.

But neither me or my mom are very familiar with the town we're visiting, as the roads are actually really confusing. So we aren't going to buy the veggies when we get there, we're going to take the ones we already have with us.
But I'm not sure how to keep them cool during the car trip. It's generally a 9-10 hour trip, but may be longer because of Thanksgiving. I thought about getting a cooler and putting ice in it, but I'm afraid the veggies with freeze and go bad (I'm bringing lettuce, parsley, red/green pepper, baby carrots and cucumber).

I can't spend a lot of money on the coolers that you can set the temperature on, or anything else. I'd say about $20 max if I actually have to buy something.
This may be a stupid question, but I have no idea how to keep them cold. Ideas?
