How do I jailbreak/unlock my Iphone 3g?

I just sold my Mytouch 3g and bought a Iphone 3g and I'm not sure on what version software it has so I can jailbreak it than unlock it. I have t-mobile sim so it stays at connect to itunes screen while connected to itunes. Please help I will love you forever aha :P and I have a girlfriend who probably is going to kill me I've been trying to figure this out all day :/
