How do I fully remove the jailbreak off my ipod?

I jailbroke my iPod touch 2g 4.1, and Cydia crashed. So I restored my iPod and it updated to 4.2.1, ive heard that restoring your iPod doesn't fully remove your jealbreak, I wanna know how to fully remove it because the information on my iPod says it's 6.8 GB and not 8 GB whitch means traces of the jailbreak are still on my device, HELP!
