How do I draw an atomic diagram?

OK, the link below is what I have so far, I had merely copied it off a book. Now my question is, when looking at an element; gold for example, how do I know how many orbitals (labeled on diagram) do I need to draw over the nucleus. And also, how do I know where the electrons go?
