How do I delete "Photo Library" on my Apple iPhone?

When I download my photos from iTunes onto my iPhone, I first place them into folders on my PC (i.e Holiday Pics, Family ect, ect). However, when downloading them onto my iPhone, I do get them in folders but they are duplicated into another folder called "Photo library". Why does this happen and is there anyway of just deleting the photo library folder for good? Thank You........
