How do I break the news to my boss that I found another job? She takes stuff

personally...? My boss of 2 years is kind of like a really good friend/mentor to me. However, she takes everything really personally and gets upset easily. I work at a restaurant part time but I have an interview in the morning for a full time job that makes LOTS of money. I'll probably get the job. But how do I tell my current boss without her going psycho on me? Somehow, I dont think "Hi Anna! I know you JUST got back from your vacation, but I just wanted to let you know, while you were gone i got hired for another job and i probably can't give you two weeks notice or they will give the job to somebody else!" is the best way to go about it.
this place will probably want me to start ASAP by the way. i dont think they really care if my litte restaurant job gets 2 weeks. :-/ but i do
 
You need to give your current job 2 weeks notice or it will look bad at the new job. I can't imagine any employer looking for someone who isn't curtious enough to give two weeks to their current employer.

Tell you how happy you have been to work for her but that it's time for you to move on and you hope she is happy for you because it's what is best.
 
If your boss is really a good friend, she will understand that a better opportunity came along, and you took it.
Nobody should begrudge you an opportunity for advancement.
