How come Arabs are written down as white in the US (in the census and demographics)?

like demographics of new york city has white, black, asian, native american, hispanic, pacific islander, and mixed.

arabs are included in that 44% white, but why? when most are brown/tan.

most arabs or egyptians i know don't consider themselves white
will they ever change that? arabs are caucasian? well then, aren't hispanics too? doesnt make sense
