How can I train my puppy NOT to play with the cats? Need help asap - she will be huge?

She's a 10 week old German Shepherd (50%)/Akita (25%)/Bullmastiff (25%) mix. She wants to play with everything, including the cats. When a cat walks past her, she pounces, pins to the ground and nibbles. She doesn't do it to hurt them, but I'm worried that one day she will go too far. We have tried the spray bottle, loud sharp noises, pulling her away, etc. How can we effectively train her to stop doing this before it's too late?

I don't want to just assume that the cats will take care of themselves. They are much smaller than my puppy is, and will be smaller than her still when she becomes an adult. I want to curb the behavior as soon as possible, and that means with human intervention. One cat has already hooked her pretty good in the ear, and she went right after that cat again a couple hours later. This is a bit more serious than chewing on a chair leg, so I really need help.
