Kolacz is a favorite in my extended family, and I am going to attempt to veganize a kolacz recipe at http://easteuropeanfood.about.com/od/polishdesserts/r/polish-wheel-cake-kolacz.htm because I like a challenge. I have some ideas for the topping and wash, but I'm not sure what to substitute for the eggs in the dough. Are they adding fat? Are they binding? Are they doing both? I'm thinking either 3/4 c. applesauce (and reducing the sugar) or 1/2 c plain soy yogurt. What exactly are the eggs doing in the recipe?
I'm also considering just making a vegan sweetbread with raisins and putting the topping and wash on top, but I don't know if the taste will be too far off from the original. I actually have never eaten this before, but I'm told it's supposed to come out fluffy.
