how can I edit label of the contact in nokia n97?and how can i underline a word

when I'm writing a message? i had a nokia before and i was able to edit the label of any contact for example when i open a contact it shows home no i edit home and write for example home NY and home LA,
and i also was able to under line any word i want when im writing a text.
can some1 plz tell me how can i do both of these things in nokia n97
