How can I avoid the ridiculous iPhone data charges overseas?

I'm going to Japan for a couple months in about two weeks. I really want to bring my iPhone (3G) because I have a Japanese dictionary application that would be of great use to me! (it does NOT require internet access.)

I don't need to use the PHONE aspect of it because I already have a Japanese cellphone. However, I have heard horrendous stories of people going overseas and having phone bills in the $K's because of data charges that they didn't know they were using...

I'm wondering if there is any way I can bypass this on my own. For example, could I constantly keep my phone on "airplane mode"? Data roaming has the "on/off" setting...does it work?

I really would like to avoid having to call AT&T to try to get random charges dropped that I didn't even use. They seem to have.....trouble communicating sometimes.
