cooking the meat..? whatever it may be...fish, steak, chicken...beforehand...and then into the fryer with it....that way I don't have to wonder if the meat is done. I have pulled out fried chicken (the old way) when the outside is golden brown and crisp and have been disappointed to find the chicken is not done all the way thru. Thanks.

Then you are not frying correctly.

I am not an expert fryer but have done a lot of it. You are frying at the the wrong temp.

Cooking meats then cooking them again will leave you with a dried out over cooked peice of meaty.

You are ruining your food.
 
I love my burgers either grilled or pan fried but your idea sounds really good. Paula Dean would love it. I love burgers so I make them all the time and use these ideas to make them tasty.
