Because they are composed of proteins and lipids, membranes are easily damaged by heat, acids and by fat solvents such as alcohol.
Can someone please explain this? We had to do an experiment when we put blueberries in ethanol, hydrochloric acid and boiling water. The cytoplasm leaked and we need to find out why.
