Help with cooking Please?

I want to learn to cook, not just for me but also I hear ladies love man who can work the kitchen lol jk. But I would also like to impress my girlfriend as well. My mom is a great cook but its mostly spanish food she does but i would love to learn all kinds of ethnic foods. I wanted to learn it on the side while i am in college right now but the classes they have are very broad. Any advice? anything online ?????or books???? that you would recommend
