HELP! Quick I have a Question about Gingerbread Cookies!?

ok so im making some and my recipe for my gingerbread calls for 4 cups of all purpose flour
well i ran out at 3 cups and lots of people say that this recipe needs like 1/2 cup of extra flour to make it stiffer
all i have is whole wheat flour and tapioca flour
i dont want to use my wheat flower cause i think it will ruin the smooth gingerbread texture and wheat flour has these weird pieces in it that dont always look or feel edible
and i dont wanna use tapioca flour cause well, its tapioca and its weird and i dont like tapioca
so WHAT DO I USE? which would be better???????????? HELP
