help editing a photo?

i see photos that people have edited and changed them to black and white, but theres one thing in the picture thats left colored. for example, a picture of a girl next to a flower, and everything is black and white except for the flower. how do people do this? can you do it on photoshop? if so, how? anyone know of any instructions or tutorials online?? thanks
