Heating problems and a question about AC for a 1999 jeep cherokee sport?

Ok, my heating problem is this. The original thermostat was a 192 OEM and it ran at 210 on my guage, since then it went out and I have replaced it with a 183 and now it runs at around 220 on my guage. Well recently my jeep has small spurts where the guage shoots up to 260 out of no where and my little check guages light comes on and after about 5 minutes it goes back to normal and runs fine. I have replaced the thermostat since then with another 183 and it still does the same. I have flushed the radiator 3 times and i have no leaks and everything is nice and green. are there any suggestions to this? Im half tempted to go to the autoparts store and buy the 160 thermostat.

Other than that, I had a little run in, I was playing in some mud puddles today and I guess some how my return line to my AC pump got snagged in my fan, so its hard to explain the details but here goes. I just want to know if theres a way to patch it and how much freon aka 134a am i going to need to fill it back up? The line comes off of the radiator and then turns in a metal line, and then goes to rubber. Where the metal part is is where my fan knocked a hole in it. its tiny, so what I was wanting to do was go ahead and cut the metal part apart and insert a rubber hose between the metal pieces and put a couple of clamps on each side, will that hold it?
